I know I say this about many of the recipes I share on this blog: simple, super easy, quick and easy bla bla bla. But that's because it's true. I truly don't try over complicated recipes or super hard ones. I'm just lazy like that. So without further ado I bring you these light and fluffy banana cupcakes. Which are ..yes you guessed it super simple.
What you need:
2 large mashed ripe bananas
1 tsp baking soda
2 tbsp milk
1 tsp baking powder
225g plain flour - sifted
What to do:
Cream butter and sugar till light and fluffy
Add eggs in one at a time.
Mix in mashed bananas.
Add baking soda that has been dissolved in hot milk. (I just zapped the milk in the microwave to get it heated)
Mix in sifted flour and baking powder. Don't over beat the batter.
Bake cupcakes in 170C pre-heated oven for about 15 mins or till they are light golden brown on top. If you want to test if cooked, insert a toothpick in the centre to see if it comes out clean.
Don't over-mash the bananas to mulch. I did it before when trying this. Not recommended. You want some lumpiness in there.
As for the batter - same thing. Don't overbeat. Mine was slightly lumpy.
Use ripe ripe bananas. (I used Cavendish bananas)
I really was pleasantly surprised with this recipe. The preparation time was short and not much fuss overall. The cupcakes are not dense but light. The banana taste is not overpowering and just right.
Makes an excellent tea-time treat. Super simple.
